I imagine human meat is somewhat like bear meat, since we are both omnivores, and have a considerable amount of fat and muscle on us. One pound of cooked bear meat contains the following:
Calories: 717
Fat: 37g
Cholesterol: 271mg
Protein: 90g
Calcium: 1%
Iron: 165%

Mainly though the nutritional value of a human would be based on its diet, if the human was overwieght and unhealthy, they would have a high fat and cholesterol content. While a slim, trim vegan would most likely supply and healthier snack.

it's likely close to pork.
in fact, in some societies, humans are referred to as long pig.

NOT THE VOICE OF EXPERIENCE. ;-)
